Lay chicken skins out flat then place another piece of parchment paper on top then another baking sheet on top of that. Place in oven and bake for 35 to 45 minutes. Stir well until combined.
Preheat oven to 375 f.
In a bowl mash yolks and 1 4 cup cheese. Slice through the top 1 3 of each egg ensuring some of the yolk is included in the slice. Reserve 2 tablespoons each chopped chicken and chopped pickles. Remove yolks reserving whites.
