Rinse the eggplant under cold water for a few minutes to remove all of the salt. Place the basil mozzarella and tomato slices between the eggplant slices. Blot the mozzarella dry and thinly slice.

Layer eggplant slices with the onion and tomato mixture in a shallow lightly greased casserole.
