Recipe Eggplant Parmesan Casserole. To assemble casserole spread 2 3 tbsp marinara sauce in the bottom of a baking dish. Bake in the preheated oven until hot and bubbling about 25 minutes.
Saute until eggplant is softened about 5 minutes. Once you have layered all your ingredients sprinkle the top of the casserole with the breadcrumbs and oregano. Top with 1 2 the sauce 1 2 the mozzarella cheese and 1 2 the parmesan cheese.
Top with 1 2 slices of eggplant followed by half of slices mozzarella half of parmesan and 1 2 cup of marinara.
Pour in marinara sauce and water. Cool for about 5 minutes before serving. Saute until eggplant is softened about 5 minutes. Once you have layered all your ingredients sprinkle the top of the casserole with the breadcrumbs and oregano.
